This ones hard to beat. A burger Inspired by 4 Charles in NYC. After having their burger a couple years ago very few have come close to match its greatness. I gave it a go at home so you can too! Full recipe below! 👇🏽🍔🥷 - 1. Get yourself some high quality ground beef. I used a ground chuck steak, ~70:30 meat to fat at least 2. Form into balls ~120g per ball, then set aside - they’re big 3. Burger sauce: 2tbsp kewpie, 2tbsp ketchup, 1tbsp Worcestershire, 1tbsp pickle juice, 1tbsp hot sauce, 1tsp Dijon, sea salt, black pepp, 1 diced pickle, same amount diced shallot & chives - mix, set aside 4. 4 Charles uses thick cut bacon - I layer up two slices of streaky to mimic the thickness, cook in oven at 200c and brush with a maple/black pepper glaze till lacquered and crispy 5. Bring a skillet to high heat, lace with neutral oil, then add in your meatballs one at a time. Smash down with parchment, season with sea salt and pepp and leave for 2 mins till seared, then flip, top with 2 slices of American cheese and cover with a lid till melted. Repeat for second patty 6. Fry an egg in butter using a ring mould till just cooked, then toast your brioche buns in more butter 7. Plate up in two halves. First half: bun, sauce, both patties and two slices of the bacon. Second half: sauce, sliced pickles, farm egg, sea salt, pepp, lots of chives 8. Traditional 4 Charles style breaks the yolk all over then puts the two together, but assemble as you like and enjoy! - Man is it good. So good. Give it a try, it’s incredible.
