How do I sharpen my knives? I’ll be honest with you… I tried whetstones for years but they were a lot harder to get the hang of, they took a while to set up, and they made a huge mess. After that, I would take my knives to a professional for sharpening, but I would often put off the process as long as possible and just end up using a dull knife until I physically HAD to drop it off again. Over a year ago, I made the switch to the HORL (with some skepticism), and immediately I was able to get my knives paper-cutting sharp, and I can maintain that sharpness super easily by sharpening anytime I need to.
