Nopalitos y carne de Puerco en Chile Puya (Pork Meat) Ingredients: 3Lbs Trocitos de Puerco 5- Chile Puya 5- Chile Guajillo 1- Lbs Tomatillo (milpero optional) 1/2- Onion 2- Garlic cloves 3- Ojas de Laurel (Bayleaves) Salt & Pepper to taste Start by cooking the Nopalitos Cut meat into small cubes and trim the fat. (Cut against the grain) In a large skillet add oil and add meat, onion, garlic, bayleaves salt n pepper to taste. Boil your tomatillos & Chili Guahillo Fry your Chili Puya Blend together the Chiles, tomatillo a clove of garlic and salt to taste. After your meat is fried add your blended chili salsa, add two cups of water salt to taste. Cover and simmer a minimum of 45 min or until the meat is soft and tender.
