Miso soup is sooo easy and quick to make! all you really need is Japanese miso paste, dashi, and any veggies you want! ✿ Ingredients: • Dashi powder [Japanese seafood stock), usually you see "hon dashi" in western supermarkets] •Japanese miso paste [fyi: even if it says there is dashi in the paste, I still add dashi powder 🙂] •Any vegetables you'd like! I added: •Carrots [thinly sliced so they cook quickly] •The whites of spring onions [leeks are fine too] •Nameko [These are little sticky mushrooms that are super healthy and I like how they thicken up the soup naturally 🙂] •Tofu [I used kinu tofu today which is like silk or soft tofu but any tofu works!] •The green part of the spring onion [scallions would work fine too!] ✿ Directions: •Put water on the stove and add the dashi •Once it starts to heat I add the veggies (except the green onions) and tofu and let it boil for a few minutes, just 2-3 is usually plenty. •Turn off the heat and use a ladle or strainer to slowly stir in the miso and incorporate it into the soup. •VERY IMPORTANT: Don't boil the soup after adding the miso paste, it will change the flavor and you don't wanna overcook the veggies or they may fall apart.
