From historic Thalassery to bustling Kozhikode and Kochi, the journey took me across three kitchens, each with its own unique story on a plate. At Thalassery’s Paris Restaurant, where biryani has been served since 1942, the aromas and flavours spoke of tradition and heritage. Kozhikode’s Kuttichira Biryani Centre brought in the famous beef biryani, layered and bold, while in Kochi the mandi at Al-Reem stole the show with its slow-cooked meat and Yemeni influence.
