Don’t have a lot of time to prepare dinner today? Look no further, this vegetarian casserole is the easiest dinner to prepare that everyone including kids will love. It is also very filling, delicious and packed with veggies that the kids won’t even notice. This recipe will make 4 hearty servings. RECIPE ======================================== Ingredients • 15-18 cherry tomatoes • 1 medium green bell pepper • 1 roasted red bell pepper • 1 small red onion • 1 cup frozen corn kernels • 1 can black beans • 1 cup of shredded Mexican cheese (or medium cheddar cheese) • 2 cups white rice (cooked) • 1 can Enchilada sauce • 150g cream cheese ( • 1 tablespoon olive oil • 2 tablespoon cumin • 1 tablespoon chili powder • ½ teaspoon cayenne pepper • 1 teaspoon salt Optional (in my opinion essential) toppings • sour cream • avocado • green onion • tortilla chips • fresh lime juice ------------------------------------------------------ Instructions 1. Cook the white rice either in a rice cooker or a pot. 2. Chop up all the veggies including, cherry tomatoes, fresh green red pepper, red onion, roasted red pepper and mince the garlic. 3. Using a large pot, add olive oil, red onion, fresh green pepper and minced garlic. Cook the veggies on high heat for about 2-3 minutes and stir often. 4. Next add cherry tomatoes, roasted red pepper, frozen corn and black beans. Continue to stir while cooking on medium heat for the next 3-4 minutes. 5. Finally, add the rest of the ingredients including, white rice, enchilada sauce, cream cheese and all the spices (chili powder, cumin, cayenne and salt). 6. Continue to cook on medium until the cream cheese is all melted. Keep stirring to get all the ingredients and spices well mixed. 7. Lastly, add the Mexican cheese and cook for few more minutes until it melts. 8. Once all the cheeses are melted (cream cheese and Mexican cheese), the dish is ready to be served. 9. Add optional toppings such as sour cream, green onion, avocado, shredded cheese, and of course tortilla chips. Squeeze some fresh lime juice on top for that extra zestiness.
