Ingredients • 8 large bell peppers, colors of choice • 1 tbsp olive oil • 1-1/2 lbs extra lean ground beef, chicken or turkey • 2 tbsp chili powder • 1 tbsp cumin • 1 tbsp garlic powder • 1 tsp salt • 1 tsp ground black pepper • 1 15oz can diced tomatoes • 1 14 oz can of black beans, drained and rinsed • 1-1/2 cups cooked white or brown rice • 1-1/2 cups shredded mozzarella cheese • sour cream, for garnish • fresh jalapeño, for garnish Instructions • Preheat oven to 375 degrees. Lightly grease a 9x13 casserole dish. Cut peppers in half from top to bottom, removing the seeds and membranes. Arrange in casserole dish. • Prepare rice as per provided instructions. • In a large pot, heat olive oil on medium-high heat. Add ground beef and cook for 4 to 5 minutes, breaking beef mixture apart. Add chili powder, cumin, garlic powder, salt and pepper. Stir well and continue cooking beef until browned and cooked through. Drain fat, if desired. • Add tomatoes and bring mixture to a simmer, about 2 to 3 minutes. • Add rice and stir mixture until well combined. Remove from heat. • Scoop rice and beef mixture into each bell pepper, about 3/4 cup each pepper. Sprinkle top of each pepper with mozzarella cheese. • Bake uncovered for 30 to 35 minutes, until peppers are tender and cheese is melted. Garnish with sour cream and jalapeños, if desired. • Recipe makes enough for two casserole dishes. Bake one to enjoy and freeze one for make-ahead meal another day.
