Today I’m making Mexican Street Corn / Esquites. Esquites is Mexican street corn served off the cob and in a cup and elotes is Mexican street corn served on the cob. What I’m making today on office cooking is esquites. I’ve been wanting to try to make this ever since I went to Mexico a few years ago. I had elotes there and loved it. Since I can’t grill corn very easily in my cubicle I decided for the esquites option and use canned corn and put it in a cup. After some searching I found most of the ingredients that I needed at the local Kroger. It really turned out nice. Julie and Franklin in the office next to mine tried it and gave it 2 thumbs up. I just estimated the measurements and it turned out great. I added a little more hot sauce to it after the video to kick it up a notch. What’s your favorite side dish?
