Plastic vs. Wood Cutting Boards Are they sanitary? Short answer. Yes. I didn’t have the time in a 60 second video to address ALL the misinformation out there about wood cutting boards being unsanitary, but I’ll summarize the key takeaways here. Basically, if you wash and dry it after you use it, ANY cutting board will be sanitary. Just use hot water and soap, and you’re good to go. (For DEEP cleaning, you can use some super diluted bleach. Whatever you're comfortable with there.) And some people also show concern for the glue inside wood boards, but the glue is INSIDE the board and doesn't leak out into your food. If you are super concerned about that, you'll have to find a solid wood cutting board. Either way, to avoid eating any plastic, I'd recommend wood for jobs where you are doing a lot of cutting. BUT for jobs where you just need a surface to protect your countertops and make cleanup easier for something messy or unsanitary, plastic is totally ok. There is not a perfect board for every situation, but for most of your cutting. I would recommend wood.
