There are many confusions relating to this - is it high carb diets, low carb diets? Or is it related to high protein or high fat? Gallstones are cholesterol stones and these stones really develop with your lack of bile, that fluid that helps dissolve fats. A high-carb diet triggers insulin which directly causes gallstones. Insulin converts carbs into cholesterol. High protein diets can also trigger insulin and cause gallstones. High-fat diet does not cause gallstones unless your carbs are high. But the main food that triggers the release of bile is saturated fats. In fact, people who go on a low-fat diet many times get gallstones because there is the very little release of bile (remember low bile causes gallstones). Low carb diets will lower insulin, but they will release lots of cholesterol from the fat cell and could trigger gallstones IF you are at the same time not consuming enough vegetables. When you do a low-carb diet (ketogenic diet), you release lots of fat and that fat has to come out through the liver and gallbladder, however, consuming lots of vegetables will counter this.
