Vegetarian Mexican Tortilla Casserole Servings: 4 Ingredients: 1 (15oz) can refried beans 1/2 medium red onion, diced 1/2 tsp cumin 1/2 tsp chili powder 1/2 (15oz) can fire roasted corn 1/2 cup red enchilada sauce 1/2 cup salsa 10-12 corn tortillas, halved 2 cups shredded Mexican blend cheese Pickled jalapenos Chopped green onions, sliced avocados and sour cream for topping Directions: 1.) Preheat oven to 375 F. Lightly grease a baking dish and set aside. 2.) Place beans, onions, cumin and chili powder in a small pot. Stir together and cook for 3-5 minutes until warm. 3.) In a separate bowl, mix the enchilada sauce and salsa together. 4.) Pour a little sauce at the bottom of the baking dish then add a layer of tortillas. Spoon in a layer of the bean mixture, followed by corn, sauce mixture and cheese. Repeat one more layer, followed by a final layer of tortillas. Top the last layer of tortillas with enchilada/salsa mixture, cheese and pickled jalapenos. 5.) Bake uncovered for 15-20 minutes. 6.) Top with chopped green onions, sliced avocados and sour cream.
