Peel the small onions and wash well. 2. In a pan, boil optional water + vinegar + salt + sugar + spices for 2–3 minutes. 3. Add beetroot slices (this will give onions a beautiful pink color). 4. Let the liquid cool slightly. 5. Put onions & green chillies in a clean glass jar. 6. Pour the warm vinegar mixture over onions. 7.
