Slow Cooker Beef Chili 🌶 Let’s make the most delicious, flavorful slow cooker beef chili! Start by chopping some onions, bell peppers, garlic and chilies. I like to add in some chipotle peppers in adobo sauce as well. Cut your beef into big chunks and season them well before searing them on all sides. In the same pot, add some olive oil and throw in your peppers, onions, garlic, chilies, tomato paste and spices and give it a good stir. Then add some beef broth and beer of your choice. I used a nice IPA here. Add canned tomatoes, season with salt and pepper and let it simmer for a few minutes. Add your beef back into the sauce and let it cook on low for 8 to 10 hours until the meat is tender. Add kidney beans and black beans about an hour before its done. Shred the beef and return it to the sauce, then serve with your favorite toppings - I like to use avocado, fresh chili slices and lime juice.
