Make the filling: In a pan over medium heat, cook onion until soft. Add beef mince, breaking it up. Cook until browned. Stir in flour, cook for 1 minute. Add tomato paste, Worcestershire, stock, salt, pepper, and optional Vegemite. Simmer until thickened. Let cool. 2. Assemble pies: Line pie tins with shortcrust pastry. Fill with cooled beef mixture. Cover with puff pastry. Crimp the edges and cut a small steam hole. Brush with egg wash. 3. Bake: Bake at 200°C (fan) for 20–25 minutes or until golden and puffed.
