Prep Time: 10 minutes Cooking Time: 20 minutes Serves: 4 Ingredients: - 600 grams Mutton - 10 Cashew Nuts - 4 Red Chillies - 2 Cardamoms - 2 Cloves - 1 inch piece of Cinnamon - 1/2 cup Tomato - 3 tbsp Oil - 3 Bay Leaves - 1 tsp Peppercorns - 1 tsp Cumin Seeds - 1 tsp Mustard Seeds - 1 tsp Turmeric Powder - 1 tbsp Ginger-Garlic Paste - 1 tbsp Red Chilly Powder - 1 tsp Cumin Powder - 1 tbsp Coriander Powder - 2 tsp Salt - 1/2 cup Fried Onions - 400 ml Water - 1 tsp Garam Masala - 2 tbsp Coriander Leaves - 2 tbsp Mint Leaves Method: 1. Heat a pan on the stove, add cashew nuts, red chilies, cardamom, cloves, cinnamon, and dry roast them on low flame for 4 minutes. Transfer the roasted ingredients to a grinder and grind them into a fine powder. Then, add some tomato pieces and grind into a paste. 2. Place a pressure cooker on the stove, add oil, bay leaves, peppercorns, cumin seeds, mustard seeds, and mutton. Fry them on high flame for 5 minutes. 3. Add turmeric powder, ginger-garlic paste, red chilly powder, cumin powder, coriander powder, and salt. Cook until the oil separates. Now, add the masala paste and cook on medium flame for 2 minutes. Add fried onions, mix well, and cook for an additional 1 minute on medium flame. 4. Pour in water and mix thoroughly. Add garam masala powder, coriander leaves, and mint leaves. Stir well. Close the pressure cooker lid and cook for 4 whistles. 5. Your flavorful Spicy Mutton Curry is now ready to be served.
