My version of Elote - Mexican Street Corn Ingredients - 4-6 corn in husk (shucked) - Mayonnaise - Crema Mexicana - Lime - Cotija Cheese - Chili powder Directions 1. Shuck your corn 2. Boil until tender 3. Char corn on the grill for added flavor 4. Rub corn with lime 5. Spread on 2 parts Mayo to 1 part Crema Mexicana mixture 6. Sprinkle on Cotija cheese 7. Top with chili powder 8. ENJOY!
