Donne Biryani I Chicken Biryani I चिकन दोने बिरयानी I Pankaj Bhadouria Here is the recipe of a unique chicken biryani! It is a chicken donne biryani! Donne Biryani is a flavorful, one-pot dish originating from Bengaluru, famous for its unique aroma from fresh coriander, mint, and spices, and its distinctive serving method in a bowl made from a dried banana leaf called a "donne" therefore the name donne biryani. Donne Biryani is known for being soft, with the rice and meat blending together. Donne Biryani traditionally uses Seeraga Samba rice. The rice and meat for the Donne Biryani are not cooked separately but together. The Donne Biryani is more a Pulao style biryani being a one pot recipe. Check out the recipe of Donne Biryani now! Chicken Donne Biryani Preparation time: 30 minutes Cooking time: 30 minutes Serves: 3-4 Ingredients: For the marination: 1 kg Chicken 1/2 cup Curd Yogurt 1 tsp Turmeric powder 1 tbsp Lemon juice Salt, to taste For the green paste: 1/2 cup Coriander Leaves 1/4 cup Mint Leaves 4 Green Chillies 8-10 garlic cloves Other ingredients: 500g Seeraga Samba rice 2 tablespoons Oil 2 Bay leaf 2” Cinnamon Stick 4-5 Cloves 2-3 Black Cardamom 2 Star Anise ½ cup thinly sliced onions 2 tbsp ginger garlic paste Salt, to taste Chopped coriander leaves Method: Wash the rice well and soak in water for 30 minutes. In a large mixing bowl combine the chicken, yogurt, turmeric powder, salt and lemon juice. Rub the marinade over the chicken for 5 minutes and then marinate for 30 minutes. In a blender combine the coriander leaves, mint leaves, and green chilies garlic pods and grind to a thick fine paste along with some water. In a heavy bottomed pan, heat oil on medium flame, add all the whole spicesand allow them to sizzle. Add ginger and garlic paste and the sliced onions, fry until the onions turn golden brown in colour. Now add in the chicken pieces along with the marinade. Mix and continue to cook the entire mixture for 5-7 more minutes, stirring continuously. Finally add in the freshly ground green biryani masala and mix well. Cook for 4-5 minutes. Add washed and drained rice, 3 cups of hot water into the pan. Give the Chicken Donne Biryani a good mix and cover the pan. Turn the flame to the lowest heat. After 20-25 minutes check biryani. Remove from heat.
