Danish restaurant Noma was crowned the world's best restaurant for the third year in a row in an annual list, beating out top eateries in Spain, Brazil, Italy, the United States and elsewhere. The S. Pellegrino and Acqua Panna World's 50 Best Restaurants, produced by Britain's Restaurant Magazine, were unveiled on Tuesday (April 30) after voting by a panel of more than 800 chefs, restaurateurs, journalists and food experts who rated chef Rene Redzepi's Noma as the "standard-bearer for the new Nordic movement." Noma's director Peter Kreiner said the win was due to a lot of hard work trying to meet customers' high expectations. "For us basically, essentially this is all about making our guests happy and basically living up to their expectations and hopefully we are delivering more than what they expect. So we try to do that every day twice a day - Tuesday to Saturday - and well that's the hard work that has taken us to that position and then you know that there is a panel of more than 800 people voting and basically it's their vote which has put us on top of the list," he said. After accepting the award, Redzepi said he was delighted to win the award for the third time and added that his main philosophy was to create delicious food using locally sourced produce. He serves a new kind of Nordic cuisine such as musk ox and smoked marrow, sea urchin and dill or beef cheek and pear. The 34-year-old chef is an ambassador for the New Nordic Food programme set up by the Nordic Council of Ministers and has headed the restaurant since its 2003 opening. "I'm so happy to see that the list actually has two Danish restaurants, we also have Geranium on the list and besides from that we actually know that Restaurant Relae which is another restaurant located here in Copenhagen, they won the list from 50 to 100 so that is great news I think that we have two or almost three Danish restaurants on the list. For sure, this is a list that people can see, they watch and pay attention to so hopefully it will mean something very good for us in Denmark, for gastronomy in our little country," he said. Nationally, Spain and the United States tied with three restaurants each in the top 10, thoughSpain's El Celler de Can Roca in Girona came second and Mugaritz in San Sebastian placed third. In all, the United States had eight eateries in the top 50 and Spain had five.
